This is a staple at my Shabbat table. The key is to chill for a couple of hours so the flavors really get absorbed. In the rare instance that you will have leftovers, this salad tastes great the next day as well.

Ingredients
- 19 ounces chickpeas, drained
- 2 tablespoons red onion, chopped
- 2 cloves garlic, minced
- 1 tomato, chopped
- 1⁄2 cup chopped parsley
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- salt and pepper to taste
Instructions
In a large bowl, combine the chickpeas, red onion, garlic, tomato, parsley, olive oil, lemon juice, salt and pepper. Chill for 2 hours. Taste and adjust seasoning before serving.
