Light and Colorful Orzo Salad

This orzo salad is pleasing to the eyes and to the palette, and great for a casual dinner or fancy entertainment.

Ingredients

  • 3 cups uncooked orzo
  • 1⁄3 cup red wine vinegar
  • 1 1⁄2 teaspoons dijon mustard
  • 1 1⁄2 teaspoons sugar
  • salt and pepper to taste
  • 1⁄4 cup canola oil
  • 1⁄4 cup olive oil
  • 1 red bell pepper, finely diced
  • 1 yellow pepper, finely diced
  • 10 ounce bag frozen peas
  • 1 cup pitted black olives, chopped
  • 1⁄2 cup red onion, finely diced
  • 1 cup golden raisins (optional)
  • 1 cup fresh parsley, coarsely chopped

Instructions

Prepare dressing first by combining the red wine vinegar, mustard, sugar, salt and pepper in a bowl. Slowly drizzle in oils, whisking until mixture is slightly thick. Set aside.

Cook orzo according to package directions, until tender. Drain, then rinse under warm water and drain again. Immediately toss orzo and dressing together.

Add red and yellow peppers, peas, olives, red onion, raisins and parsley. Mix well. Serve at room temperature.
