Watermelon Ice in a Chilled Fruit Soup

Ingredients

  • 3 cups watermelon cubes
  • 1⁄2 cup passion fruit juice (unstrained)
  • 1⁄2 cup freshly squeezed orange juice
  • 1 cup peach, pureed
  • 1 cup mango, pureed
  • 1⁄2 cup sugar
  • 3 heaping teaspoons corn starch
  • 1⁄4 cup assorted berries

Instructions

Prepare the watermelon ice:
Puree the watermelon in a food processor or with a hand-held blender. Pass through a fine sieve and pour into an ice cube tray. Freeze overnight.

Prepare the soup:
Bring the juices, peach, mango, sugar and cornstarch to a simmer, stirring frequently, and cook on low heat until slightly thickened. Chill in the refrigerator (the soup will further thicken).

Pour the chilled soup into deep bowls, add 3-4 watermelon cubes to each bowl and garnish with berries.
