Passover Nut Cake

Ingredients

  • 9 eggs, separated
  • 1 1⁄2 cups sugar
  • 2 tablespoons oil
  • 1 teaspoon lemon juice
  • 2 (7 ounce) packages ground nuts

Instructions

Preheat oven to 350 degrees F.

In an electric mixer, beat the egg whites until stiff.

In a separate bowl, beat yolks with sugar until pale, creamy and thick. Beat in oil and lemon juice. Fold yolks into whites. Fold in nuts.

Pour into greased tube pan and bake in preheated oven at 350 for 1 hour. Open oven door and let cool in oven 10 minutes before removing.
