Salmon and Apple Salad

This is a very tasty salmon salad, and the apple gives it a nice crunch.

Ingredients

  • 1 lb. salmon fillet
  • 1 tablespoon lemon juice
  • 1 cup tart apples, peeled, cubed (such as Granny Smith)
  • 1⁄4 cup diced red onion
  • 1⁄4 cup mayonnaise
  • 1 tablespoon balsamic vinegar

Instructions

Sprinkle the salmon with lemon juice.

Cover and bake at 350 degrees for 17 minutes or until cooked through.

Remove skin from cooled salmon and drain.

Place fish in a medium mixing bowl and flake with a fork into pieces. Mix in apples and red onion.

In a small bowl, combine mayonnaise and vinegar. Toss with salmon mixture.

Notes

You can make this on Passover with Kosher for Passover mayo.
