Flounder Delight

These fillets are a great addition to any special occasion. They're easy to make, too! Cherry tomatoes are an excellent garnish.

Ingredients

  • 1 (1 lb.) package flounder fillets (sole or cod)
  • 1 (1 lb.) can salmon, drained and flaked
  • salt and pepper
  • onion powder
  • garlic powder
  • 2 tablespoons margarine
  • 1⁄3 cup mayonnaise
  • 4 tablespoon ketchup

Instructions

Preheat oven to 350 degrees. Grease baking pan and set aside.

Lay out fillets on a flat surface. Sprinkle with salt, pepper, onion powder and garlic powder. Place generous amount of flaked salmon on each fillet. Roll up each fillet and fasten with a toothpick.

Arrange fish on a greased baking pan. Dot each rolled fillet with margarine. Cover and bake at 350 degrees for 20 minutes.

In a medium bowl, mix together the mayonnaise and ketchup. Pour mayonnaise mixture over fish and return to oven for 5 minutes.

Serve garnished with cherry tomatoes.
