Ingredients
- 1 cup of raw couscous, cooked according to package directions
- 1 cup garbanzo beans
- 1 bunch scallions, chopped
- 1 red bell pepper, diced
- 2 1⁄2 teaspoons curry powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄4 cup lemon juice
- 1⁄2 cup olive oil
Instructions
Combine all ingredients and mix well. Refrigerate for at least one day before serving.
