Ingredients

  • 1 cup of raw couscous, cooked according to package directions
  • 1 cup garbanzo beans
  • 1 bunch scallions, chopped
  • 1 red bell pepper, diced
  • 2 1⁄2 teaspoons curry powder
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon pepper
  • 1⁄4 cup lemon juice
  • 1⁄2 cup olive oil

Instructions

Combine all ingredients and mix well. Refrigerate for at least one day before serving.
