Potato Salad

Potatoes, green pepper, carrots, and pickles are combined with a mayonnaise dressing in this classic potato salad. Cooked peas and carrots can be added, if desired.

Ingredients

  • 3 pounds potatoes, unpeeled
  • 1 large green pepper, finely diced
  • 1 large carrot, finely grated
  • 2 pickles, finely diced
  • 2 scallions
  • 6 heaping tablespoons mayonnaise
  • 1 teaspoon salt
  • 1⁄2 teaspoon garlic powder
  • 1⁄4 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 1⁄2 teaspoon dry mustard

Instructions

Place unpeeled potatoes in a 4 quart pot. Cover and cook for approximately 40 minutes. Rinse in cold water.

While potatoes are still warm, peel and cube. Combine with vegetables in a large bowl.

In a small bowl, combine dressing ingredients. Mix until smooth. Pour dressing over potato mixture and mix until thoroughly coated.

May be served warm or cold.
