Chilled brown rice is combined with fresh herbs, tomatoes, and radishes in this delicious salad.

Ingredients
- 2 cups cooked brown rice (grains should be separated)
- 1 cup fresh parsley, chopped
- 1 cup scallions, chopped
- 1⁄4 cup fresh mint leaves, chopped
- 1⁄4 cup olive or vegetable oil
- 1⁄4 cup lemon juice
- 1⁄4 teaspoon cumin
- 1 garlic clove, crushed
- salt and pepper to taste
- 4 medium tomatoes, chopped
- 8 radishes, thinly sliced
Instructions
In a medium bowl, combine rice, parsley, scallions, mint, oil, lemon juice, and seasonings. Toss well and chill.
Before serving, add tomatoes and radishes, then toss again.
