These pears are easy to make, yet create an elegant and classy dessert. For a variation, apple juice can be substituted with dry red or white wine or steeped tea, and you can try a vanilla bean instead of the cinnamon stick.

Ingredients
- 6 large, firm bosc pears, with stems
- 2 cups cold water
- 1 lemon, juiced
- 2 cups apple juice or cider, unsweetened
- 1 cup sugar
- 1 cinnamon stick
- 6 peppercorns
Instructions
In a large bowl, mix water with lemon juice. Peel pears, leaving stems intact. Remove seeds from the bottom (can be done with melon baller). To prevent browning, place in water mixture while peeling remaining pears.
In a large stock pot, heat apple juice or cider, sugar, cinnamon and peppercorns. Bring to a boil. Add pears. Reduce to a low boil stirring occasionally, until pears are soft and easily pricked with fork (about 20 minutes).
Using a slotted spoon, remove pears from pot. Continue to cook the juice on high heat, until juices are reduced by half. Pour over pears and serve.

i made these poached pears for dessert and served them in shallow bowls in a few spoonfuls of melted chocolate mixed with some coconut milk. gives a nice addition to the pears.
