I love this Black Bean Soup on a cold day. Its full of flavor and healthy too! If using pareve soup stock, garnish with shredded cheddar cheese and sour cream.

Ingredients
- 2 15 ounce cans black beans
- 1 15 ounce can dark red kidney beans
- 4 carrots, chopped
- 1 stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon vegetable oil
- 1 tablespoon fresh cilantro, chopped
- 2 bay leaves
- 1⁄2 teaspoon cayenne pepper
- 1 tablespoon salt
- 2 teaspoons cumin
- 1⁄2 teaspoon oregano
- 4 cups beef or vegetable stock
- 1⁄2 cup water as needed
Instructions
Pour all ingredients into large pot. Simmer for one hour. Remove bay leaves before serving.
