Cheese Latkes (Passover)

These cheese latkes are my children's favorite. I just can't get them off the pan fast enough...

Ingredients

  • 1 16-ounce container of cottage cheese
  • 1⁄2 teaspoon sugar
  • 4 eggs
  • 2 cups of matza meal
  • 1⁄4 cup vegetable oil

Instructions

In a large bowl mix cheese, sugar, eggs and matzah meal into a batter (batter will be slightly lumpy because of cheese).

Heat oil in large frying pan. Drop spoonfuls into oil to make pancakes. Flip when lightly brown. When golden remove from oil and let drain. Serve with sour cream or applesauce.
