This zucchini soup is quick, inexpensive, easy to make, and healthy. For a thicker soup, add a potato, cut into chunks.

Ingredients
- 1 onion, diced
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 2 large zucchini, cut into large chunks
- salt and pepper to taste
- water
Instructions
In a large pot, saute onion and garlic in olive oil until translucent. Add zucchini, salt, pepper, and enough water to cover. Simmer for 35 minutes, or until zucchini is soft. Blend with an immersion blender until smooth.
