Super moist carrot cake with an awesome Pareve cream cheese frosting. Need I say more?

Ingredients
- 1 1⁄2 cups sugar
- 3⁄4 cup canola oil
- 3 eggs
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 teaspoons vanilla
- 2 cups grated carrots
- 1 stick margarine
- 1 8-ounce container of tofutti cream cheese
- 3 cups confectioners sugar
- 1 teaspoon vanilla
Instructions
Preheat oven to 350 degrees F. Grease a 9x13-inch pan, or two 9-inch pans.
In a large bowl, combine sugar, oil, and eggs. Add flour, baking soda, spices, 2 teaspoons vanilla and carrots, mixing until well blended. Bake 45-60 minutes, or until toothpick inserted comes out clean. Let cool completely before frosting.
Frosting: Combine margarine, Tofutti cream cheese, confectioners sugar and 1 teaspoon vanilla, beating until light and fluffy.
