- 1 cooked chicken, deboned and cut into bite size pieces
- 2 tablespoons teriyaki sauce
- 1⁄4 cup rice vinegar
- 1⁄4 cup sugar
- 2 teaspoons soy sauce
- 1 tablespoon sesame oil
- 4 tablespoons canola oil
- 1⁄3 cup slivered or sliced almonds
- 1⁄3 cup sesame seeds
- 1 head lettuce, preferably Romaine, washed and torn for salad
- chow mein noodles
Place chicken in a bowl. Blend teriyaki, rice vinegar, sugar, soy sauce, and oils together well. Pour over chicken and let marinate 20-30 minutes. Toast almonds and sesame for a few minutes, until golden, in separate pans in a 350 degree oven or on the stovetop. Watch carefully that they do not get overdone.
In salad bowl, toss lettuce with chicken, almonds and sesame. Sprinkle chow mein noodles on top before serving.
The recipe calls for marinating the chicken, but tastes great even if you don't marinate for that long.
